Filling:
3 medium ripe pears, peeled, cored and sliced
2 large nectarines, peeled, pitted and sliced
2 large peaches, peeled, pitted and sliced
1/3 cup sugar
2 Tablespoons cornstarch
1 Tablespoon butter, chilled, in small pieces
Topping:
1 cup flour
1/2 cup yellow cornmeal
1/3 cup sugar
2 teaspoons baking powder
1/4 teaspoon cinnamon
1/8 teaspoon salt
1/2 cup milk
1/4 cup oil
Preheat oven to 375. Spray an 8-inch pan with cooking spray. Mix fruit, sugar, and cornstarch and place in prepared pan. Dot with butter.
Mix topping ingredients and spread over filling. Bake until topping is lightly golden and fruit juices are bubbling, about 35 to 40 minutes. Serve with ice cream.
